This is a collection of signature recipes, kindly provided by a selection of producers and restaurants spanning Galway, Mayo and Clare. We hope you can re-create and enjoy the best of what the West has to offer at home and in doing so raise much needed funds for the ISPCC, a worthy children’s charity.
The West of Ireland, known to many for its rugged coastline, unique landscape and cultural traditions, has in recent years tantalised our taste buds with award winning restaurants and an ever expanding food community. This book will take you on a journey, starting with a selection of some of the finest food producers in the West, absorb the sights, sounds and smells of Galway’s St. Nicholas’ market, and discover the restaurants of the West, where care and attention is taken in selecting the finest, local and seasonal ingredients.
All of the 31 contributors to this book have given us their invaluable time and considerable efforts during their peak season. Amidst opening new restaurants, a prolific growing season, preparing for new arrivals and the day-to-day running of a business, this is no mean feat.
